Ignore the combination of words that involve ‘pizza’ and ‘Vietnamese’ for a moment and just look at the picture. Doesn’t it look enticing? The melted gooey cheese? The crunchy fried anchovies? The generous slices of calamari? Just try to refrain from imagining it all swimming in a pho, or slowly seeping through a bun bowl.
Who am I kidding? I’d still eat that shit happily. Pizza in broth has somehow flown under everyone’s radar and I’m glad to be the one to bring it to the surface.
Obviously, Sky Restaurant specialise in Vietnamese food, but they own a pizza oven and they use it with increasing popularity. And with good reason. So many places that offer vegan pizza try to emulate the take away pizza style of the chain pizza restaurants, but Sky aim for the much more artisan pizza makers. Full of flavour, both in topping and crust, the crunch of the anchovies and onion texturally complements the gooey cheese and the chewy mock seafood. Quite genuinely this is one of the best vegan pizzas I’ve had, but at the same time one of the most wide-of-the-mark banh mi ever.
