Home schooling is definitely interesting, but my favourite part is when Liv makes food! She previously followed a delicious Lemon Drizzle Cake recipe in her last Food Tech class, which was easy for at home baking. This week Liv has followed an easy Oat Cookie recipe, which can be viewed below.

Cookies are a fabulous treat, especially with a good brew. Everyone has their favourite cookie, but could this recipe tempt you? Feel free to adapt how you wish, as you do not actually need to make the cookies with oats.

The teacher referred to the recipe as a hybrid as it combines the recipe for cookies or cake, also known as Melting Moments cookies.

Easy To Make Oat Cookie Recipe

Whether you trust your teens or you want to bake with younger children, this is a really easy recipe to follow.
It should make 10-12 oatmeal biscuits, any less and you will need to cook the cookies slightly longer.

Easy Oat Cookie Recipe

An easy to make cookie recipe – can be adapted

Equipment

  • Scales
  • Large mixing bowl
  • Wooden Spoon
  • Small bowl/jug
  • Tablespoon/ Teaspoon/ Fork
  • Baking Tray
  • Plate

Ingredients

  • 100 grams Butter
  • 75 grams Caster Sugar
  • 1/2 egg Beaten Egg
  • 1 teaspoon Vanilla Essence
  • 125 grams Self Raising Flour
  • Oats

Instructions

  1. Turn oven on – gas mark 4 or 170°C for Fan assisted ovens
  2. Grease a baking tray
  3. Weigh out ingredients
  4. Cream together the sugar and butter in a large bowl with a wooden spoon
  5. Crack the egg into a smallbowl/jug and beat with a fork. Divide beaten egg in half and stir in the vanilla essence to the half you are using for your biscuits.
  6. Stir egg mixture into creamed sugar and butter mix (Remember to only use half an egg)
  7. Slowly stir in the flour using a tablespoon and mix until mixture can be shaped into a ball
  8. Arrange a few handfuls of oats on a plate.
  9. Gather the mixture together and drop spoonfuls of the biscuit mix onto the oats and roll carefully until fully coated
  10. Place on baking tray – well spaced – and flatten slightly with fingertips
  11. Bake for 10 – 12 minutes until firm at the edges. Cool on the tray for a few minutes, the transfer tocooling rack

Can I use normal oats for cookies?

Yes you can! Although you may find that quick cooking oats have a different texture and size to the old fashioned oats we are all used to. It is all down to personal preference though and what you prefer to cook with, or have to hand!

What kind of oats are best for cookies?

As mentioned above, you can use any oats for baking oat cookies. However, traditional rolled oats provide the chewy, nutty flavour we all expect from oat cookies.

They are also thicker and heartier than quick oats. As the cookies themselves are very quick to make, you may find that traditional rolled oats are the best to use.

Are oat cookies healthy?

Cookies made with oats certainly have a higher fibre content in comparison to normal sugar cookies. They also contain a good portion of minerals such as calcium, iron, magnesium and potassium, all of which are a aid our overall physical health.

When compared with normal sugar cookies, oat cookies also have less calorie content. So you shouldn’t feel too guilty about having one extra cookie!
